No more pressuring myself to come up with a ‘recipe of the week’ but will share where the journey takes me and hopefully fuel your inspiration along the way.
I love sharing my culinary passion with friends, family, and anybody else who appreciates the love of good handmade food. Today I’m sharing our love of popcorn, chocolate, and salted caramel with my daughter, Sophie, in this homemade, handmade treat (coming to UBC very soon).
‘THE’ BEST POPCORN
24 c popped popcorn
½ c butter
1 c dark brown sugar
¼ c light corn syrup
1 t salt
1 t vanilla
¼ t baking soda
½ c great quality white chocolate
½ c great quality dark chocolate
Preheat oven to 250 degrees.
Pop corn and place in a large bowl. Set aside.
In a medium saucepan over low heat melt butter. Add sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Stop stirring when the mixture starts to boil and then boil for 3 minutes.
Remove from heat and stir in the vanilla and baking soda to create the caramel.
Pour the hot caramel over the popcorn and toss to evenly coat the kernels. Spread popcorn evenly on 2 parchment covered baking pans.
Bake for 45 minutes tossing popcorn every 15 minutes.
Remove from oven and allow to cool.
Meanwhile melt white and dark chocolate separately in microwave at 15 second intervals to prevent burning.
Now it’s the ART…drizzle with great flair across the popcorn.
Allow to set in the fridge for an hour and then break apart into pieces.
